The Story Behind the Slice

French toast began as something simple.

In post–World War I Europe, families transformed stale bread into nourishment rather than waste. When the dish made its way to the United States, it evolved — becoming sweeter and deeply woven into Southern brunch culture.

For Keith Brown, that culture wasn’t history. It was home.

Mentored by a proud descendant of the Geechee community from Georgia’s Ogeechee River region, Keith learned that food carries identity. Bold flavors. Flamboyant Southern style. Generational pride.

That influence lives on at The Toast Factory — a family-owned brunch restaurant in Rochester built on authenticity, care, and attention to detail.

Our signature Geechee Plate — steak paired with French toast layered with cheese — isn’t just popular. It’s personal.

We don’t just serve brunch in Rochester.
We preserve heritage — one slice at a time.
